My first attempt!

Right so finally after spending very little time on it I have managed to figure out how this thing works! :) 

I have wondered about doing a blog for a while, I mean everyone is doing it! But I have no idea if it will be something that I enjoy or...endure!! (Oh by the way I am BIG on exclamation marks!!) So its been sitting in the back of my mind for a while and then about 2 weeks ago I had a 'Meat Free Monday' discussion with my friend, who said she had tried the previous night with a 'MFM' meal and her hub was not impressed with his baked potato! Ha ha ha! Now I have always had a LOT of cookbooks and cooking mags and have always said that I probably have any recipie that you could want. So I thought about the blog and about my friends predicament and desided that maybe I should start and see how it goes.

Well for me the easiest 'MFM' meal would have roasted vegetables included in it somewhere. The main tips for Roasted Veg that I have is firstly use mediteranean veg eg: peppers, aubergine, onions, tomatoes, courgettes. You can add Butternut which is always available in SA, not even sure when the right season is for it! Secondly, chop roughly the same size. Thirdly, drizzle with olive oil so as to coat each piece of veg lightly, not enough oil will not allow the veg to roast as nicely. And lastley, add seasoning, woody herbs and a splash of balsalmic vinegar or lemon juice. I cook my veg quite high so that the moisture evapourates quickly and then they can roast to sweet deliciousness quicker.


Now add your veg to pasta, cous cous or top a green salad.


If you are adding it to your pasta its a good idea to make up a simple tomato sauce to go with it. Onions, carrots,celery, tomatoes... And then blend that up with half the roasted veg for your sauce. This makes a really fantastic pasta dish for your 'MFM' and the bonus is, if you make it with all fresh veg it is incredibly good for you and the kids have no clue that they are eating all this amazing veg! I mix in a bit of milk, cream or a dairy product of some sort for the kids to tone down the tomatoes acidity for them, and let me tell you, they wolf it down.
